Hokkaido's first postwar sake brewery, crafting small-batch junmai with Daisetsuzan spring water.
Hokkaido's first new sake brewery since World War II opened in 2017 in the small town of Kamikawa at the foot of Daisetsuzan National Park, founded specifically as a regional revitalization project. Spring water from the Daisetsu mountain system feeds small-batch junmai sake brewed from three Hokkaido rice varieties by a master toji who relocated 1,500 kilometers from Mie Prefecture. Visitors watch the brewing process through outdoor viewing windows. Most bottles are sold only within Kamikawa, making a visit the primary way to taste it.
