Operating in central Mito since the Edo period, Yoshikubo Sake Brewery produces small-batch nihonshu using water drawn from deep wells beneath the city. The tasting room offers flights of seasonal limited releases rarely found outside Ibaraki, including a prized unfiltered namazake. Staff walk visitors through the mash rooms and cedar-lined storage, explaining the koji-making process that defines the house style.
