Yamanari Shuzō is Ibara’s sole sake brewery still in operation.
The Yamanari family has been brewing sake in Ibara since 1804, and the same family still lives on the premises today. The 19th-century buildings sit between rice fields and cherry trees along the Oda River, and inside, steaming, pressing, and bottling are still done by hand with vintage equipment. The pot-style rice steamer is increasingly rare among modern breweries. Finished sake matures in an unrefrigerated room cooled by night breezes through open doors, an intentional choice to reduce energy use. With advance reservation, you can tour the facility and the 1882 Meiji-era residence next door, which has hosted notable guests over the years.
