Set in a converted Edo-period estate at the foot of Mount Yashima, Yamadaya serves Sanuki udon with flour specially developed for its thick, springy bite. The main dining room opens onto a traditional garden with stone lanterns and koi ponds, a striking contrast to the typical bare-bones udon shop. Their signature cold-dipped udon with a grated yam broth showcases the noodle's distinctive chew.
