Turban Curry

Kanazawa has its own curry tradition, and Turban is the place most closely associated with it. The sauce is darker, richer, and more complex than typical Japanese curry roux, built on a longer cooking process with more spice layers. It comes served with a thick slice of pork cutlet and pickled vegetables on the side. The restaurant is small and centrally located near the Omicho Market, making it a natural lunch stop during a day in Kanazawa. Lines are common at midday on weekends.
