Inotani is considered the definitive Tokushima-style ramen: rich, sweet tonkotsu-shoyu broth with slow-braised pork belly, a raw egg cracked on top, and thin noodles. The shop is tiny, just 10 counter seats, and has served the same recipe since 1976. The owner's technique of mixing egg into hot broth creates an uniquely creamy texture.
This closes at 5 PM and the broth runs out earlier. Go at 10:30 AM opening for the richest broth and no queue.
