Tempura Araki holds two Michelin stars and occupies a quiet counter in Sapporo where the chef works through a procession of seasonal ingredients at close range. Hokkaido produces exceptional seafood and vegetables, and the frying here brings out flavor rather than coating it: thin batter, precise oil temperature, and timing calibrated to each ingredient separately. The meal runs as a course and takes two hours or more. Reservations are essential and prices reflect the level, but it is one of Sapporo's most considered dining experiences.
