A small-batch sake brewery in the historic post town of Chizu, producing Suwa Izumi sake from local rice and pure mountain spring water since 1859. The atmospheric wooden brewhouse offers tastings and tours where you can watch the toji (master brewer) at work during winter brewing season. Their junmai ginjo pairs beautifully with local wild boar nabe.
