In 2003, a newcomer joined the lineup of beverages made in Shirakami Sanchi: wine made from Yama Sauvignon grapes cultivated in the heart of Fujisato.
The Fujisato Shirakami Grape Producers' Association began growing Yama Sauvignon grapes in 1998, releasing their first wine in 2003. Yama Sauvignon is a hybrid of Cabernet Sauvignon and the native wild grape yamabudou, developed by a Yamanashi University professor after over 600 crossbreeding experiments. The resulting wine is dry, medium-bodied, with notes of black currant, and pairs well with red meat. In 2020 a cosmetics company built a winery and research facility in Fujisato where tours and on-site purchases are available. The wine is also sold at Hotel Yutoria near the Shirakami-Sanchi World Heritage Conservation Center.
