Shinsei (Yamamoto Honke)

Yamamoto Honke has been brewing sake in Fushimi since 1677, drawing water from the Shiragikui spring, one of the Seven Illustrious Springs of Fushimi and named for the white chrysanthemum. The brewery was destroyed in the Battle of Toba-Fushimi in 1868 and rebuilt the same year. Now in its eleventh generation, it produces sake that bridges traditional Kyoto flavor and modern pairing possibilities, including one created to accompany matcha. Its pub-style restaurant, Torisei Honten, operates inside a 150-year-old warehouse and serves Japanese dishes cooked with spring water alongside popular chicken skewers and unfiltered genshu sake poured straight from the tank.
