Kanazawa's 300-year-old 'Kitchen of Kanazawa' occupies a covered arcade where 170 vendors hawk Sea of Japan catches: snow crab legs as thick as your arm, sweet shrimp still twitching, and nodoguro (blackthroat seaperch) grilled on the spot. Navigate past the tourist-heavy entrance to the back alleys where locals buy seasonal vegetables, pickled turnip, and dried kelp at wholesale prices.
The kaisendon (seafood bowl) stalls on the second floor have better prices than the famous ground-floor shops.
