Eibun approaches Okinawa soba with more design consciousness than the typical shokudo. The broth stays true to the traditional pork and bonito combination, but toppings might include braised pork in a citrus glaze, slow-cooked ribs in a ginger-forward sauce, or seasonal additions that rotate with the Naha market. The bowls are presented carefully and the noodles are made fresh in-house. It sits in the Makishi area of Naha, close enough to Kokusai-dori that it works as a lunch stop during a central Naha day.
