Awamori. Okinawa's indigenous rice spirit distilled with black koji, predates both sake and shochu. Zuisen, established in 1887 near Shuri Castle, offers free guided tours of their traditional distillation process and tastings of varieties aged up to 25 years. The vintage kusu (aged awamori) develops complex flavors that surprise even whisky connoisseurs.
Local tips
Ask to taste the 25-year kusu. It's smooth as fine whisky. Buy the 3-year as a souvenir; it'll continue aging in the bottle.
