Ogamian Soba sits in the Fushiogami settlement on the Nakahechi route of the Kumano Kodo pilgrimage, run by Nakane Yuma, a yamabushi mountain ascetic who studied soba-making before opening here. The noodles are made from scratch each day with two ingredients only: local buckwheat and water. The menu is vegetarian and built around what Nakane and his family forage and grow nearby. The Michelin Guide awarded the shop both a Bib Gourmand and a Green Star, the latter for its commitment to sustainability. Walk-in seats are limited, and Nakane occasionally runs soba-making sessions for pilgrims who book in advance.
