Run by Niigata's beloved Befco rice cracker company, Senbei Okoku lets visitors experience the art of making senbei from scratch using Niigata's premium koshihikari rice. You can grill oversized crackers over charcoal, paint them with soy sauce designs, and create custom flavored senbei. The factory tour shows the industrial production line, and the shop sells exclusive flavors available nowhere else. It's a surprisingly fun and delicious deep-dive into Niigata's rice culture.
Local tips
The giant bakauke senbei grilling experience is the most fun. You get a cracker the size of your face and can draw whatever design you want in soy sauce before grilling.
