Menya Shirakawa

Takayama ramen is its own distinct style, built on a dark soy-sauce base with chicken and pork combined, producing a rich broth with visible fat that was developed to provide warmth through mountain winters. Menya Shirakawa is a reliable representative of this style in central Takayama, close to the morning market and old town. Noodles are thin and straight, and the char siu is generous. A bowl here before or after walking the Sanmachi Suji historic district is a practical and satisfying combination.
