Ishigaki is one of Japan's main bluefin tuna fishing ports, and Hitoshi Ishigantou is the place to eat it. The menu focuses almost entirely on tuna in every cut and preparation: sashimi of otoro, chutoro, and akami, grilled collar, tuna broth soup, and tuna pickled with miso. The izakaya atmosphere is lively and unpretentious, with wooden tables, draft beer, and groups of regulars. Reservations need to be made well in advance, especially for weekend evenings.
