Century-old soba shop in Motobu using wood-ash alkaline noodles. One item on the menu, always a line.
Three generations of the Nakahodo family have been making Okinawa soba here for over 115 years using the traditional method of burning Itajii hardwood, collecting its ash, and soaking it overnight to produce alkaline water for the noodle dough. The menu is exactly one item: soba in a large or small bowl, topped with braised pork belly, fish cake, and green onions. Lines form daily at this back-street shop near Toguchi Port.
