Keika helped establish Kumamoto ramen as a distinct regional style, with their taromen featuring cabbage and distinctive burnt garlic oil (mayu). The tonkotsu base gets its Kumamoto identity from these additions that separate it from Hakata's purer approach. The original shop maintains recipes developed decades ago.
