Kanda Yabu Soba has defined Tokyo soba standards since 1880, and even a devastating 2013 fire couldn't end their tradition. The rebuilt restaurant faithfully preserves the atmosphere and recipes that made it legendary, firm, flavorful noodles in a slightly sweet dipping sauce that represents the Edo soba aesthetic.
