Hitsumabushi is Nagoya's signature eel dish, and Ibasho is one of the more refined places to eat it in the city. The grilled eel arrives over rice in a lacquered wooden box, and the traditional three-step eating method has you first eat it plain, then with condiments like wasabi and nori, and finally as ochazuke poured with dashi broth. Ibasho operates in a quieter neighborhood away from the main eel restaurant clusters, which means a more relaxed atmosphere and slightly shorter waits. Lunch reservation recommended.
