Hyotei began as a tea house near Nanzenji and has held three Michelin stars every year since the Kyoto guide started in 2009. The full kaiseki is a months-ahead reservation. The way in most travellers miss is the morning: the asagayu breakfast, a porridge course served in the same garden rooms, taken before the city wakes.

One of Kyoto's most prestigious kaiseki restaurants, operating for over 400 years. Reserve by phone (Japanese) at least 2 weeks ahead, earlier for weekend dinner. Hotel concierge booking strongly recommended for foreign visitors. The morning porridge breakfast (3,000 yen) is easier to get on shorter notice and is an experience in itself.
