Hoto is Yamanashi's signature dish: thick flat udon noodles simmered in a rich miso broth with kabocha squash, taro, mushrooms, and seasonal vegetables. Hoto Fudo's main branch near Lake Kawaguchi serves the stew bubbling in cast-iron pots with enough heft to warm a winter hike. The building's organic shell-like architecture by Takeshi Hosaka is a destination in itself.
