The isolated Kuma Valley holds 28 shochu distilleries, the highest concentration in Japan, producing kuma shochu, a GI-protected rice spirit made exclusively with Kuma River water and local rice. Many distilleries offer tours and tastings, revealing the difference between pot-distilled and column-distilled styles. Sengetsu distillery ages barrels in caves; Takahashi distillery has been operating since 1900.
