Hamamatsu and Utsunomiya wage an annual battle for Japan's gyoza capital title, and Hamamatsu's version is distinctive: pan-fried in a circular arrangement with a mound of bean sprouts in the center. Ishimatsu Gyoza, a local chain since 1953, crisps the bottoms to a lace-thin crust while keeping the pork-cabbage filling juicy. Most shops are cash-only and close by 8 PM.
