Furyudo has been crafting wagashi in Matsue since the Meiji period, and its most famous sweet, Yamakawa, is ranked among Japan's top three classic confections. It is a rakugan, a dry pressed sugar sweet in red and white layers that crumbles softly on the tongue with subtle sweetness. Matsue is one of Japan's great tea culture cities, shaped by the tea-loving feudal lord Matsudaira Fumai, so wagashi shops are woven into daily life here.
