Fukusaya has been making castella sponge cake in Nagasaki since 1624, when Portuguese missionaries first introduced the recipe through this port city. Four centuries of refinement produced a definitive version: moist golden cake with a fine, even crumb and a layer of crystallized sugar on the bottom that gives a subtle crunch with the last bite. The main store on Funada-machi street occupies a traditional building where bakers work in view of the counter. Whole cakes and individual portions come wrapped in the shop's distinctive yellow packaging, one of Nagasaki's most recognizable souvenirs. The shop ships nationwide.
