Sitting on the main street of Miyajima island, Fujitaya earned Michelin recognition for its refined take on anagomeshi. The conger eel is grilled to crispy-skinned perfection and served atop rice in a hot wooden container (seiro) that keeps everything steaming and fragrant. The intimate space seats only a handful of diners at a time, which keeps the quality exacting but means waits of an hour or more are common at lunch. Arrive early, they often sell out before closing time. The set meal with small sides and miso soup is the way to go.
