Chuka Soba Hirakoya has built a loyal following around its intensely flavored niboshi (dried sardine) ramen, a style that Aomori has made its own. You can choose your preferred level of fish broth intensity, from a milder, balanced version to a full-throttle "super niboshi" that packs a concentrated anchovy punch. The noodles are thin and springy, designed to carry the broth well. At under 1,000 yen per bowl, it is excellent value, though expect a queue during peak lunch hours as the shop is small and word has spread.
