Ando is a no-frills counter restaurant near Morioka Station that locals consider one of the best places for authentic reimen. The dish features uniquely chewy, almost rubbery noodles (made from potato starch) served in an ice-cold beef bone broth with kimchi, egg, and seasonal fruit, watermelon in summer, Asian pear in autumn. You choose your spice level from 1 to 5, and the interplay of cold, spicy, sweet, and savory is unlike anything in the rest of Japan.
Start with spice level 2 (bekkarai) if it is your first time. Level 3 and above uses fresh habanero. The watermelon in summer sounds odd but is essential to the flavor balance.
