Aji no Sanpei holds a special place in Japanese culinary history as the birthplace of miso ramen, where founder Morito Omiya first blended miso paste into a noodle broth in 1955. The original recipe remains largely unchanged: a rich, hearty miso soup brimming with stir-fried bean sprouts, ground pork, and onions over springy medium-thick noodles. The restaurant occupies a modest space inside the Daimaru Fujii Central building near Odori Station, with counter seating and a nostalgic atmosphere that feels frozen in the Showa era. Despite its legendary status, prices remain remarkably modest, and the friendly staff welcome both curious tourists and loyal regulars who have been coming here for decades.
